Soy Sunday 130: Dessert; Strawberries, Cookies and Milk

As the title suggests this recipe is pretty simple. Its a twist on strawberries and cream over shortbread.

I recently bought Mr. D some Enjoy Life Sugar Crisp Cookies and figured I would try a new item out on him…

Ingredients:
  • Strawberries
  • Sugar Cookies
  • Sugar
  • Vanilla Soy Milk

 

First, After I washed them, I capped about 6 strawberries sliced & quartered them.

After they were all cut up I layered them in a bowl with some sugar sprinkled in between the layers. Just a little bit of sugar to make a natural syrup from the juice it will draw from the strawberries. In total I used maybe 2 to 2-1/2 teaspoons of sugar for all of the strawberries.

After I mixed the strawberries well, I covered them and placed them in the fridge for just over an hour. You can let them sit longer if you want/ need to. It will just make more of the natural juice syrup in the bottom of the bowl. But I wouldn’t let them sit for more than a few hours.

After I let that sit for a while, I took 2 sugar cookies and broke them up into a bowl.

 

 

Then I spooned the strawberry mixture over the top of the cookies inside the bowl.
Then I stirred the strawberries and cookies together before adding some soy milk. I used Vanilla flavored because that’s what I had on hand.

The soy milk began soaking into the sugar cookies, making them soft an smooth to eat.
