We are always trying to find something to change up our dinners.  Something to keep the kids interested in eating.  I know they are tired of seeing salads or spoonfuls of vegetables on their plates. So for dinner we decided to try something different.  We had Garden Lites Superfood Veggie Cakes. 

What vegetables are in  Garden Lites Superfood Veggie Cakes?  You will find the vegetable blend of Broccoli, Carrots, Cauliflower, Red Bell Peppers, Kale, Onion and Zucchini.  You can either warm them up in the oven or use the microwave if you’re looking for a quick snack. 

Thankfully C likes most of his veggies.  He knew that there were Carrots in the Garden Lites Superfood Veggie Cakes, but he didn’t realize the other vegetables that were included.  If he would have known that this consisted of Kale, he would have made a funny face and said he didn’t like it before trying it.  But that’s because he has never tried Kale before. 

Peanut is the one who we have to “trick” into eating vegetables.  Unless it’s only Carrots or Corn on the Cob, she keeps saying she doesn’t like them.  She will put up a fight until everything is cold, and then eat it and make funny faces or spit it out because it doesn’t taste good.  So we told her that she could have cake with her dinner.  She was all about it.  She’s got a “dessert” tooth – so I knew she’d try it without fighting.  
Needless to say this “CAKE” was a hit for dinner!  I bought some for work for when I need a snack.  Something easy to keep in the small freezer, and that only takes a minute to warm up.

    Those veggie muffins look amazing and so nutritious. We are vegetarian and vegan so we would love a snack like this.

    I can see my kids liking these. Well, my daughter at least. They might freak my son out, but he has autism and can be quite picky. But my daughter loves her veggies!

    Now this is something both my son and hubby need. Can you believe that I have a hard time convincing BOTH of them to eat their veggies?!

    These look like a great breakfast or even snack option! My daughter is vegetarian and I am always looking for quick options for her that give her the nutrients she needs. These would be great for her!

    I love everything on this package I can eat those for breakfast every day. Tough recently I’m cutting my produce consumption but I can always make an exemption.

    This is a great healthy snack to have around. It’s interesting, how just changing the form of food makes such a difference to kids. I’m going to have to try these.
