Just next week we will be celebrating Thanksgiving… And then on to Christmas! Tis the season for cookie baking. Typically I LOVE to make batches upon batches of cookies, to take to parties or snack on the whole holiday season. But this year things are a little different. We will be packing up one house and moving to another. That means, my big mixer has been packed away, and I only have my small hand mixer. I didn’t want to have the move get down my baking spirits, so onto Walmart we went. I knew they had the Betty Crocker Cookies.

Peanut and I grabbed a few of our favorites, and some decorating goodies. We couldn’t wait to get home to start making a mess…. Oh, I mean making cookies. (If you have kids that help you bake, you’ll understand the mess lol)
Peanut was so excited to help me bake Betty Crocker Cookies.
This particular Cookie mix needed an addition of 1 Stick of butter and 1 egg. Peanut was so excited to try to help me. She helped me soften the butter and also crack the egg. She was all about cracking the egg, until it actually cracked and all the whites and yolk came out. Then she asked for a napkin quickly! Because we had a small party to get ready for, we chose to split this one bag of mix into making 2 types of cookies. I did add about 1/4 cup of flour because I needed the dough to be a little stiffer to make the cut out cookies and then the special peanut butter cookies.
Peanut got to try out her cookie cutting skills. We realized that the cookie cutter she chose to use was a little too small, but it gave her the chance to get use them. For the second style, we chose to put a little twist on the traditional Betty Crocker Sugar Cookies. During the Holidays I love making Molded Peanut Butter cookies. These aren’t the traditional Peanut Butter Cookies, but they have a little dollop of peanut butter and brown sugar mix in the center.
To make Molded Peanut Butter Cookies using Betty Crocker Mixes:
You mold the dough into a small ball (I use ones that are about 1″ in diameter), then press a indent in the center of each one. That’s where the filling goes. For the filling you use a ratio of 2 Tablespoons of peanut butter to 1 Tablespoon of Brown Sugar. After you are done filling the centers, you then fold the edges towards the center, making it back into a ball. You top these with sprinkles.
So when you’re ready to bake cookies, make sure to get your Betty Crocker at Walmart! Now it is so much easier to make smaller batches of all your favorite cookies!
Hey! I want to see pictures of the finished cookies!! Oh, wait. If you are like me, you ate them all already. LOL!
