Soy Sunday: Blue Velvet Birthday Cake
Mr. D turned 4 this past week and while perusing the baking aisle at my local grocery store I found this awesome new cake mix which included instructions on the box for making it dairy free… score!
Duncan Hines came out with several new flavors of cakes one of them being this new Blue Velvet vanilla cake. So simple, so good, so cute AND SO BLUE!!! So I figured i would do something a little different for his birthday besides the usual chocolate, white or yellow.
The recipe called for butter to be used, but below all the time information it had those magic words “substitute oil for butter”
The batter was really thick, I mean really thick, thick enough that I thought I messed it up and was worried it would not turn out correctly. but since I knew I had followed the instructions, I figured I would see it through and hope for the best.
I made the cupcakes for the kids at the party that we were going to have on Sunday and made the cake for his actual birthday night at home with us. I used his current favorite color for the frosting and surprised him with the color inside.
He was so happy and excited to eat the cake that he didn’t even ask for ice cream.

Ok, 1st step done! Bought a box at Meijer last night, I think Ill try cupcakes this weekend!

How cool is that! I found a spring colored cake mix, I am debating on whether I want to get it and make my own cake or just buy one for Easter! LOL I may just get Loft House cookies though, those are so good! LOL Decisions, decisions! Thanks for letting us know how easy this mix was to make soy free!
