Diary Free Cheese Roll Ups

My nieces love cheese roll-ups. Its something simple and easy when they want a snack or even to make a few if they want them for dinner.
My Darling Daughter USED to like them up until about 2 years ago when she started not liking anything other than chicken nuggets, fries and hot dogs (ugh) but that’s another story.
Well, recently I tried to re introduce them to her and Mr. D as a quick snack… I did it the day after we had homemade pizza  and used some left over mozzarella cheese. It worked 🙂

They both loved it.

A few days later they asked for it again, this time for dinner… mommy said sure and gave them “dipping sauce” (pizza sauce) to go with it, which I forgot to get a photo of… oops :/

But on to the cheese roll-ups … they are sooo easy and simple to make. All it takes is 2 or 3 ingredients and a microwave. We used fajita shells because they are smaller and some Dairy Free “mozzarella” cheese. If you want you can use pizza sauce or spaghetti sauce for dipping. My nieces like ranch for theirs.

After putting the fajita on the plate, I sprinkled a nice even coating of cheese across the shell. I placed it in the microwave for about 30 seconds. You might have to adjust the time based on your machine. After it came out of the microwave I rolled it up, be careful- it may be HOT.

Both kids enjoyed the roll ups tremendously and have asked for them several times since. We have a new favorite 🙂

    My kids love cheese roll-ups! We always have sliced cheese so they slap a few on a tortilla roll & off they go. 😀

    These are sooo good! I have dipped them in salsa and almost everything. They are quick and so easy. I love these and make them alot of lunches and snacks
