Soy Sunday 111: Chicken Quesadilla's

We tried some thing new in our house this past week…. Chicken and Cheese Quesadillas.

Ingredients used: shredded mozzarella and cheddar soy cheese, chopped up precooked chicken chunks, tortilla shells, olive oil spray and a small frying pan.

First I took the chicken and chopped it smaller then I sprayed the pan with some non stick olive oil cooking spray. After placing the tortilla in the pan on med-high heat, I layered the 2 cheeses and the chicken on top. After a few minutes of melting and browning, I very carefully used two spatulas to fold HALF of the tortilla over on top of the other half and pressed it down while keeping the cheese and chicken inside of the shell. I kept it browning on the one side for a little bit checking occasionally before flipping the whole thing to brown the other side . Once both sides were browned nicely I slid the whole thing onto a plate to cut it in to smaller quarters. I sliced it into 4 quarters, you could do 2 or 3 depending on your preference. 

This was really really bland; no pepper, no salt, no salsa… nothing. But I wanted to see how Mr. D would do with this new food.

Mr. D enjoyed the new food for about 2 bites per quarter then left the rest for mommy. Which mommy of course tried and actually enjoyed with a little salsa we had in the fridge!

    This recipe looks so yummy. Our oldest was just diagnosed lactose intolerant so I think this recipe will definitely work for her. Thanks for posting.

    My husband LOVES when I make chicken quesadillas! You would think it was a gourmet meal by the way he raves about them but it’s so simple!

    Chicken quesadilla’s are a regular staple in my house lately it seems! We buy the chicken chunks, unless we make something else and have extra chicken breast and cook them and add in chicken taco seasoning and rotel with green chili’s and just cook till done then add the cheese to it and cook on griddle/skillet whichever and serve with ranch or sour cream 🙂 Quick and easy and my kids love em!

    Chicken Quesadilla’s is always a crowd pleaser in our house, I love making these. I also love using beef too, with lots of cheese.
