Homemade Mashed Potatoes

Homemade Redskin Mashed Potatoes… Tasty goodness that most of us enjoy with out thinking twice. I also never thought anything different when I made them with dinner one night until i started to add Milk and Butter!

Well no problem right? Just take some of the potatoes and set them aside.

I thought it would be that easy but it turned out to be a little harder because soy milk and coconut butter do not mash together the same way as regular milk and butter. It ended up mixing more like paste the first time. The second potato was a little bit better.

We have since done it with regular Idaho potatoes and they mixed much better. I am thinking it must have something to do with the texture of the potato’s as they get mashed up.

Mr. D loved his potatoes and didn’t mind the paste-y texture.   I loved the fact that his dinner plate exactly matched ours again.

    You are so right. I don’t use soy milk but have had this happen to me before with certain potatoes. Not sure what it is or why but it wasn’t because of the soy and coconut butter.

    I love red skinned potatoes, but they do have a bit of a different texture.
