Chocolate Chip Banana Bars

Banana-BarsWhat do you do when your Banana’s start to become over ripe and turn brown?  You Make Banana Bars, that’s what you do.   Our family goes through spurts when it comes to eating bananas.  We’ll go weeks on end eating the full bunch, but then you’ll get the random week where no one was in the mood for bananas like they were before.  And you don’t want them to go to waste.   So, why not turn them into a delicious treat?

For this recipe you’ll need :Banana-Bars-2

2 cups Flour
2 tsp. Baking powder
1/2 tsp salt
2/3 cups shortening
2/3 cups sugar
2/3 cups brown sugar
1 tsp vanilla
1 egg
1 cup smashed bananas (about 2 full size bananas)
6 oz package chocolate chips

 

Banana-Bars-5Directions:
Sift flour, baking powder and salt.
Cream shortening sugar and brown sugar until light and fluffy.
Add in vanilla, eggs and bananas and mix.
Add flour mixture.
Stir in chipsBanana-Bars-4Spread batter in a greased and floured 10 1/2 by 15 1/2 jelly roll pan.
Bake at 350 degrees for 20 to 25 minutes

I personally start at 20 minutes and then check the Bars.  To check to see if they’re done, you take a toothpick to the middle (or the highest point in the bars) and stick it in – if it comes out clean then they’re done… If it comes out with a little dough, then you need to bake them a little longer. Banana-Bars-7Cut them into squares and serve on a plate.  These will be the hit of the party!
